Whole Food Plant-Based Recipe #1: Tofu Spinach Scramble
Idea #1 if you are starting a plant-based lifestyle:
Tofu Spinach Scramble
In a nonstick pan on medium/high heat, sauté onions, bell peppers, purple cabbage (cut in small pieces), add sliced mushrooms. Sauté further until onions are translucent. Crumble Extra firm drained tofu into mixture and cook further until tofu is thoroughly heated. Add onion powder, garlic powder, salt, pepper, paprika, and a dash of cayenne pepper.
Finally, add a handful of fresh spinach. Cook just enough for the spinach to wilt. Done! The cooking portion shouldn’t take longer than fifteen or twenty minutes if your nonstick pan is preheated. No oil is necessary but it can be used. I don’t.
All veggies and spices are optional. Use what you like to eat. I don’t measure anything. Add as much of each ingredient as you like. I make an entire pan and eat it all. You won’t get fat off of veggies! Season to your taste.
This is how I cook. Not always tofu, sometimes O’Brien potatoes. Sometimes add rice or add the mixture to pasta. I mix up the veggies and spices. Add black beans or lentils. Sometimes no potatoes or tofu just veggies! I just don’t cook with oil that much and if I do it is usually just a nonstick spray.
More recipes to come.

Eating Healthy Is So Hard
Eating healthy is so hard when you have little preparation time and no will power. One of the ways that I have found to cure this problem is to take one day a week, usually Sunday for me, to prep ahead of time.
Cooking meat ahead of time for at least five meals is a very helpful tip since this seems to be the task that takes the most time.
Chopping and packaging vegetables that you will need for the week helps also.
Even bagging up the lunch items so the kids or hubby can grab and go makes it easier.
Already made rice or quinoa are available in the freezer section of the local grocery store.
All of these preps make life so much easier during the week and are readily available so that willpower isn't as much of an issue anymore. It all took less than an hour out of my Sunday to prepare, too! Make your life easier today and give this method a try.

A Healthy Way To Start Your Morning
Here is another easy healthy solution to your rushed mornings!
My son enjoys these smoothies. I like to vary up the flavors of yogurt and the type of fruit blends so that he doesn't get bored with them. He doesn't even notice the kale.
Frozen Fruit and Kale Smoothie
1 Cup of Strawberry Yogurt
1 Cup of a Frozen Berry Blend
3/4 Cup of Soy Milk
1 Cup of Fresh Kale
1 Teaspoon of Ground Flax Seed
Add all ingredients to a blender. Blend until everything is smooth and well incorporated. Pour into a glass and enjoy!
